Recipe: vegan protein cinnamon stars

Cinnamon stars at Christmas time are definitely a must-eat, right? We hope you've been good this year, because tomorrow is a big day: One more sleep, then it's Santa Claus! Have your shoes been cleaned and left in front of the door? If you are still looking for a last-minute idea for your family, friends, yourself or Santa Claus himself, here is your chance:

When life gives you nucao, make cinnamon rolls

We love nucao , we love delicious pastries - in short: we love the Christmas season. That's why we've combined all our favorites and created an incredibly delicious and also super simple recipe that you should definitely try: without eggs, without refined sugar and without ready-made dough. But completely vegan, with natural ingredients and super delicious. Baking yourself is much more personal anyway than buying gingerbread, vanilla crescents and other Christmas treats in the supermarket or at the bakery next door.

All you need for the cinnamon stars are:

  • 200 g ground nuts (hazelnuts, almonds, walnuts...)⁠
  • 125 ml cold water ⁠
  • 90 g wholemeal flour (e.g. spelled) ⁠
  • 75 g numove Shake Cacao Cinnamon ⁠
  • 50 g maple syrup ⁠
  • 25 g coconut blossom sugar⁠
  • 7 g vanilla sugar ⁠
  • 2 teaspoons cinnamon ⁠
  • pinch of salt ⁠
  • 3 bars nucao Creamy Noisette⁠ (of course this also works with other flavors)

Vegan Protein Cinnamon Star Cookies

A little tip: You can also adjust the quantities and bake fewer or more biscuits as required. Those who are keen to experiment can also use cloves, aniseed and co. as spices or refine the cinnamon stars with marzipan - of course changing the classic cinnamon star taste a bit.

First step: turn on Christmas music, sing along to the songs and get in the mood. Let's go: Mix all the ingredients well together - except for the chocolate bar - and then form a ball out of it. Put the ball of dough in a bowl, cover it and put it in the fridge for about 30 minutes.⁠ In the meantime, you can preheat the oven – and your Christmas spirit – to 160 °C for circulating air.⁠

Now divide the ball of dough into three parts, roll them out and take your cookie cutters (for cinnamon stars we recommend – who would have thought it – stars, of course). Now it's time to cut out. Then place the stars on a baking sheet and bake them for 15-20 minutes. Keep checking them as baking times can vary slightly from oven to oven - we don't want your treats to burn, do we? You can also shorten or lengthen the baking time a bit, depending on how soft or crispy you want the stars to be. While the cookies are cooling down, the nucao bars are on their way. For them it is now in the water bath.

It is best to put them in a bowl or something similar and let them melt slowly. When the cookies are ready, you can brush them with the delicious nucao chocolate icing and decorate them as you like.

You can store the finished biscuits in a tin, give them away to your loved ones, snack on them as dessert - at any time of the day - or top your porridge or ice cream with them. There are no limits to your creativity and you can definitely wrap Santa Claus around your finger with this treat. ;)
